Here’s a recipe to make it at home:

Ingredients:

  • 1 kg basmati rice
  • 1 kg chicken, cut into pieces (you can also use lamb or goat meat)
  • 2 cups yogurt
  • 2 onions, sliced
  • 1/2 cup cooking oil
  • 1/2 cup ghee
  • 2 tsp ginger paste
  • 2 tsp garlic paste
  • 1 tsp red chili powder
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala powder
  • 1 tsp salt
  • A few saffron strands
  • 1/2 cup warm milk
  • 1/2 cup chopped coriander leaves
  • 1/2 cup chopped mint leaves

Instructions:

  1. Soak the rice in water for 30 minutes. Drain the water and keep aside.
  2. In a large pot, heat oil and ghee together. Add sliced onions and fry until they turn golden brown. Remove half of the fried onions and keep aside.
  3. To the remaining onions, add ginger paste, garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Fry for a minute.
  4. Add chicken pieces and fry until they turn golden brown.
  5. Add yogurt and mix well. Cover the pot and let it simmer for 20 minutes until the chicken is cooked.
  6. In a separate pot, boil water and add soaked rice. Cook for 5-7 minutes until the rice is half-cooked. Drain the water and keep aside.
  7. In the same pot, add a layer of half-cooked rice. On top of it, add a layer of cooked chicken and gravy. Add some fried onions, chopped coriander leaves, and mint leaves.
  8. Add another layer of half-cooked rice and repeat the process with the chicken and gravy. Top it with fried onions, chopped coriander leaves, and mint leaves.
  9. Mix saffron strands with warm milk and pour it over the layered rice and chicken.
  10. Cover the pot with a tight-fitting lid and place it on a low flame for 15-20 minutes.
  11. After 20 minutes, turn off the flame and let the biryani rest for 10 minutes.
  12. Serve hot with raita and salad.

It is best served hot and fresh with raita and salad. You can also serve it with some boiled eggs and a slice of lemon. Enjoy!
