Ingredients:
- 1 kg basmati rice
- 1 kg chicken, cut into pieces (you can also use lamb or goat meat)
- 2 cups yogurt
- 2 onions, sliced
- 1/2 cup cooking oil
- 1/2 cup ghee
- 2 tsp ginger paste
- 2 tsp garlic paste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala powder
- 1 tsp salt
- A few saffron strands
- 1/2 cup warm milk
- 1/2 cup chopped coriander leaves
- 1/2 cup chopped mint leaves
Instructions:
- Soak the rice in water for 30 minutes. Drain the water and keep aside.
- In a large pot, heat oil and ghee together. Add sliced onions and fry until they turn golden brown. Remove half of the fried onions and keep aside.
- To the remaining onions, add ginger paste, garlic paste, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala powder, and salt. Fry for a minute.
- Add chicken pieces and fry until they turn golden brown.
- Add yogurt and mix well. Cover the pot and let it simmer for 20 minutes until the chicken is cooked.
- In a separate pot, boil water and add soaked rice. Cook for 5-7 minutes until the rice is half-cooked. Drain the water and keep aside.
- In the same pot, add a layer of half-cooked rice. On top of it, add a layer of cooked chicken and gravy. Add some fried onions, chopped coriander leaves, and mint leaves.
- Add another layer of half-cooked rice and repeat the process with the chicken and gravy. Top it with fried onions, chopped coriander leaves, and mint leaves.
- Mix saffron strands with warm milk and pour it over the layered rice and chicken.
- Cover the pot with a tight-fitting lid and place it on a low flame for 15-20 minutes.
- After 20 minutes, turn off the flame and let the biryani rest for 10 minutes.
- Serve hot with raita and salad.
It is best served hot and fresh with raita and salad. You can also serve it with some boiled eggs and a slice of lemon. Enjoy!
